CROCKPOT RECIPES - PORK By: Ray Eddings
Iberville, LA (diamondrocket.com) Wednesday, April 18, 2007 - Here are some crockpot recipes that feature pork. Enjoy. Apple o’My Eye Pork Loin A touch of ginger makes this apply pork loin sing! Ingredients: Rub down the roast with salt and pepper then broil to just brown the outside and remove some of the fat. While the roast is browning, core and quarter the apples then arrange them in the bottom of the crock pot. When the roast is just browned and the fat has begun to drip off, drain it well and place on top of the apple quarters. Combine the apple juice, brown sugar and ginger. Mix well until the sugar is dissolved. Pour over the roast. Cover and cook on low 10-12 hours until done. Pork Chops These pork chops cook nice and tender with a hearty gravy you can pour over the meat or on mashed potatoes. Ingredients: Heat the oil over medium high heat in a nonstick pan. When the oil is hot quickly brown the pork chops. Transfer the browned chops to the slow cooker. In the remaining oil cook the onion until its well cooked and beginning to turn brown. Transfer the cooked onion to the slow cooker. In a small mixing bowl combine the ketchup, soup, and Worcestershire sauce. Mix well then pour over the pork chops. Cover and cook on low 5 hours until done. Pulled Pork Sandwiches These sandwiches are always a hit. Serve them with pickles and potato salad and your family will sing your praises. Well, maybe not but they’re guaranteed to clean their plates! Ingredients: Place the roast in the crockpot. Just cover it with hot water and cook on low overnight, 10-12 hours. Pour off the water and shred the meat into manageable chunks. Place the meat back in the cooker. In a nonstick skillet, cook the onions in oil or butter until just tender. Add to slow cooker. Juice the lemon. In a small medium mixing bowl combine the lemon juice, barbeque sauce, sugar and Tabasco sauce to taste. Mix well until the ingredients are blended and the sugar dissolved. Pour over the meat and stir just enough to mostly coat the meat and onions. Cover and cook on low 3 to 6 hours. To serve add about half a cup of meat to the sandwich bread or bun. Top with a generous portion of cole slaw or shredded cabbage. |
